Yes, that’s what it says! These are my Constipation Cookies! And, if you have issues, they will “get you moving”.
Well, they aren’t exactly for me, but I came up with it for my little guy. He struggles with constipation and I researched and researched and researched a ton of recipes and I decided to combine a few of the ideas from several and this is what I created!
I would recommend having two per day to begin with and see how you do.
1 ½ cups prune puree (how to make prune puree is in directions)
1/4 cup coconut oil
1/4 cup applesauce
2/3 cup coconut sugar, honey or agave nectar
1 egg (or egg substitute)
½ t. vanilla
1 cup oat flour (or gluten free baking mix of your choice)
1 cup regular old fashioned oats
½ cup flax meal or ground flaxseed
½ t. baking powder
½ t. baking soda
½ t. cinnamon
½ t. salt
*OPTIONAL – 1/4 cup chocolate chips and/or nuts of choice
**Additional flax meal to make a good drop cookie consistency—if necessary.
To Make the Prune Puree:
Put 1 ½ cups pitted prunes and 1 ½ cups water in a lidded small microwave-proof container.
Microwave on high for three minutes and allow to cool with the lid on.
Drain the prunes saving the liquid. Puree in a blender with as much of the liquid as is necessary to allow the machine to work. Continue to add the liquid as needed.
Preheat oven to 350 degrees. Mix together prune puree, applesauce, oil, sweetener of choice, egg, and vanilla. Beat well. Add remaining ingredients.
If the dough is not stiff enough to make drop cookies, add more flax meal until it is. Fold in Chocolate chips and/or nuts. Drop by rounded teaspoons onto a well-greased cookie sheet or use parchment paper (these will probably be smaller blobs than you are used to). Bake 14-16 minutes.
These can burn easily on the bottom, so watch them carefully.
Makes about 4 dozen small, soft, drop cookies.
IF you are 21 day FIXing, I would count 4 small cookies as ONE YELLOW container and 1 tsp if you add choc chips and/or nuts.
So I just made this exact recipe but substituted a few ingredients as I did not have them on hand:
Instead of OAT FLOUR I used Coconut Flour
I did not add Oatmeal
I added 1 ripe mashed avocado (i had one that I HAD TO USE or it was going in the trash)
1 added 1/2 cup of GLUTEN FREE kid cereal (like cheerios)
And look, much more round and firm. Less of a drop cookie style and more of a regular cookie!
